I first came across Today’s The Best Day a few months ago when I had begun monetizing my blog and was looking around the web for inspiration and blogging guidance. At first glance, TTBD has nothing to do with me! I’m not married, a mother, or Mormon, but there was something about the site that I absolutely loved. It felt so warm and inviting that I found myself reading all about Danielle’s take on life and love.
As I said, I’m not Mormon but I am a very spiritual person, and I love that despite our very different lifestyles, Danielle and I have the same core beliefs and values. We believe in love, family, a higher power, and we believe that we have the power to make our lives truly amazing.
Now what does that have to do with Almond Pulp Fudge, you might ask? Well nothing really 🙂 I just wanted to take the opportunity to comment on how much I love connecting with wonderful heart centered people, regardless of our backgrounds and lifestyles. It’s part of what makes blogging so much fun, and I’m very grateful for it.
Alright, now let’s talk about fudge ☺ I love making homemade almond milk- it’s so easy and completely delicious! But it seems kind of wasteful to throw away all of the pulp after! I had a feeling I could use it to make a really delicious treat, so I grabbed my food processor and started experimenting. I was really impressed with the result, and so was my family (which is saying something because they are pretty wary when it comes to health food)!
I found that ½ cup dry almonds will result in ½ cup almond pulp. If you’ve never made almond milk before, check out my guest post on Little Blue Anchor for the (very simple and delicious) recipe. ☺
Amazing Avocado Almond Pulp Fudge
INGREDIENTS:
½ cup almond pulp
6 dates
½ tsp vanilla
Dash of salt
2 tbsp cacao or cocoa powder
¼ avocado
1 tbsp maple syrup
1 tbsp hemp seeds
1 tbsp cacao nibs (optional)
DIRECTIONS:
Place all ingredients into a food processor and blend until smooth.
Scoop fudge into a container or ramekin, flattening it out and smoothing the surface.
Alternatively you can roll the fudge into bite sized balls.
Place in the freezer for a few hours and then enjoy ☺
